AOP Ventoux – La Chasse des Princes

This range, created in 2017, is dedicated to gastronomic wines that pair especially well with game dishes. This Ventoux red will perfectly complement a hare stew, reflecting the spirit of its label.

Terroir
Siliceous clay with chalk debris at the foothill of Mont Ventoux in villages of Caromb and Saint-Hippolyte-le-Graveyron
Grape varieties
50 % Grenache, 35 % Syrah, 15% Carignan
Winemaking
The grapes are destemmed and crushed before undergoing a four-week maceration with regular pump-overs. Fermentation occurs at temperatures between 25 and 30°C.
Ageing
The wine is aged for six months in concrete tanks to maintain its freshness and purity of the fruit.
Tasting notes
This wine shows a deep garnet color with violet highlights. Its bouquet is fresh and intense, revealing aromas of red fruits and cherry. On the palate, it is round and fruity with silky fine tannins, accompanied by spicy and fruity nuances.

Best enjoyed within 2 to 3 years. Serve between 14°C and 16°C to fully appreciate its aromatic profile.
