Technical facts :

Soils : Clay and Silicious
Winemaking : Destalking, crushing, 15 to 20 days of fermentation, release and punching of the cap.
Controled temperature at 20° to 30°C.
Aging : 8 months in tank.
Grapes varieties : Grenache 80%, Syrah 10%, Mourvèdre 5%, Cinsault 5%.


Tasting and Food to be served with :

The wine comes from old grenache, Syrah, Mourvedre and Cinsault, over 40 years old.
The grapes are completly hand-picked.
Well structured, strong and full bodied, it will age from 5 to 7 years. You can also enjoy it younger. It will perfectly match dishes with sauce, roasted meat, game and cheese.
